Holy Paladin Professions

I personally recommend Jewelcrafting and Alchemy as holy paladin professions. For the most raw intellect, you will find Blacksmithing and Jewelcrafting to be the best for the bracer and hand sockets.

However, Flask of Distilled Wisdom is painful to farm in mass quantities. With Alchemy, as long as you have the flask recipe, this will last for two hours and provide 85 base intellect. Alchemists also craft Crazy Alchemist's Potion for a mere 2 Goldclover. This potion procs a random potion effect in addition to health and mana, and has a chance to give a double mana potion effect for 8400 mana. Alchemists also have access to Endless Mana Potion for easier fights that never runs out.

Two elixirs exceed Flask of Distilled Wisdom's intellect count slightly and provide roughly 200 extra mana if you are an alchemist because they both dip into mixology, creating a "double-dip" effect: Guru's Elixir and Elixir of Mighty Thoughts. The only problem is that on progression fights you will be chugging these nonstop, and the flask is a major convenience.

65 intellect (with mixology) = 85 intellect (with kings and divine intellect) = 102.85 intellect

78.65 intellect grants 1179.75 mana initially which supplies 11.8 mp5 from replenishment and 24.58 mp5 from divine plea if used on cooldown for a total of 36.38 mp5

102.85 intellect grants 1542.75 mana initially which supplies 15.43 mp5 from replenishment and 32.14 mp5 from divine plea if used on cooldown for a total of 47.57 mp5

Distilled Wisdom Sample Fight / Additional Benefit

Additionally, assume 10 seal of wisdom procs granting 4% additional mana per swing from the Distilled Wisdom flask during a 4 minute fight. This works out to be ~12.86 mp5 with mixology and ~9.83 mp5 without.

In that same 4 minute fight, your restoration shaman casts mana tide totem, granting 24% of your mana to be restored over a 12 second interval. This totem would restore 370.26 more mana with the flask, or ~7.71 mp5 with mixology and ~5.90 mp5 without.

The critical strike rating on Flask of Distilled Wisdom also provides an amount of mp5. For this calculation I'll be referencing "Crit, Mp5, Haste, and you!" at Healingcouncil.com. Assuming constant holy light casts and a 1.3 second cast time, we can cast 3.85 holy lights in 5 seconds. We get .69% crit from the flask with Mixology. The formula is thus 0.0069 x 382 mana x 3.85 = ~10.00 mp5 with mixology. Without mixology this number falls to ~7.65 mp5.

Total Distilled Wisdom Gains

The total mp5 granted from this sample fight in addition to the static mp5 benefits of Distilled wisdom:
Mixology: 78.14 mp5, 22.62 spellpower, 0.69% crit, 1542.75 mana
No Mixology: 59.76 mp5, 17.3 spellpower, 0.52% crit, 1179.75 mana

Alternative Flask

Some may say that Flask of Pure Mojo is a good choice as well. With mixology, this provides 65 mp5 and nothing else. Without, it provides 45 mp5. From the above calculations, it's clear that Pure Mojo is inferior.
